Phaedra's Healing Bone Broth

Cold and flu season is upon us. Sniffles and coughs and cold fronts that last two days leaving us wanting more fall weather but instead leave our immune system in meltdown mode. To combat this we here at The Guild stock our freezers with bone broth. I am sure many of you have had bone broth from the store and thought “hey this isn’t too bad... but dang it is expensive!” What if I told you it was incredibly easy to brew up a batch at home... with minimal cooking skills necessary. 

Phaedra has held my hand through several rounds of cooking bone broth with an instant pot and I am here to tell you it can be done! Now, having said that, Phaedra puts a little extra health kick in hers that makes it amazing. It is healing to the tenth degree and also can be added to soups for those of us that cannot bring ourselves to sip piping hot broth out of of a mug. So grab a pen and an instant pot and let’s get healthy!

Instant Pot Broth

2 bay leaves

1 onion, roughly chopped

5-6 cloves of garlic, roughly chopped

2 T. Apple cider vinegar

Salt and Pepper

1 Roaster chicken **

(**if you don’t have a raw roaster chicken that is ok! Head over to your local grocery store and grab a rotisserie chicken. Pick all the meat off and set aside, put carcass in pot)

Fill to max line with water and set manual mode for 120 minutes with air vent sealed. After two hours let off air vent and strain. 


Now...... comes the really tasty healthy part. Head to your local Ranch 99 store (or Asian market) and pick up the following:


Fish Sauce

Bonito Fish Flakes

Kombu seaweed

Red Miso




Kefir Lime Leaves



Healing Bone Broth

1 onion, roughly chopped

5-6 gloves garlic, roughly chopped

1 inch ginger, roughly chopped

5-6 pieces of turmeric roughly chopped 

(Lime leaves and lemongrass can be added at this point)

Sauté over medium heat for 3-5 minutes, until aromatic. Add strained bone broth from instant pot. 

1 T. Fish Sauce

1 T. Tamari 

2 pieces Kombu seaweed

1 packet Fish flakes

Let simmer for 20 minutes. Do not boil.  Remove from heat. Strain. Add 1/3 cup red miso, stir in well and enjoy! 

Add chopped hot peppers and Sirarcha into the broth if you like things spicy. 


My mom swears this makes the greatest chicken soup. Simply take the chicken from the carcass you put in the instant pot and add to broth. In a separate stock pot sauté carrots and celery, or whatever other vegetables and cooked noodles. I am telling you though, I lived off this broth for a week last year and it is so comforting snuggled up in blankets with Netflix and tissues.
